- Kale Leaves, approximately two cups
- 1/4 of a cucumber, peeled and chopped
- One whole avocado
- A fourth cup of sunflower seeds, salted and roasted
- 1/4 a cup of parmesan cheese
- One small pink crisp apple, sliced and diced

- 1 clove of garlic grated
- 2 tbsp of dijon mustard (such as grey poupon)
- 1 tsp of red wine vinegar
- 1/2 a cup of olive oil

This kale salad recipe is very easy to make. It will take you all of 10 minutes to prep and eat.
If you bought un-roasted and unsalted sunflower seeds, you will need to bake them. Set your oven to 400 degrees. Place the sunflower seeds in a pan and sprinkle with 1 tbsp of olive oil and a dash of salt and pepper. Bake for about six minutes.
Once the sunflower seeds have been roasted, remove from pan and set on a bowl or plate that is not hot and allow them to cool.
