Winter Kale Salad Recipe

In the middle of winter, post holiday we are all ready to get on the healthy train. Its time to swap out the heavy stews and casseroles for a healthy alternative. I have just the remedy, a winter kale salad recipe packed with nutrients.

Ingredient List for Winter Kale Salad Recipe

  • Kale Leaves, approximately two cups
  • 1/4 of a cucumber, peeled and chopped
  • One whole avocado
  • A fourth cup of sunflower seeds, salted and roasted
  • 1/4 a cup of parmesan cheese
  • One small pink crisp apple, sliced and diced

Ingredient List for Dressing

  • 1 clove of garlic grated
  • 2 tbsp of dijon mustard (such as grey poupon)
  • 1 tsp of red wine vinegar
  • 1/2 a cup of olive oil
  • 1/4 tsp of pepper
  • 1/4 tsp of salt

This kale salad recipe is very easy to make. It will take you all of 10 minutes to prep and eat.

Step 1

If you bought un-roasted and unsalted sunflower seeds, you will need to bake them. Set your oven to 400 degrees. Place the sunflower seeds in a pan and sprinkle with 1 tbsp of olive oil and a dash of salt and pepper. Bake for about six minutes.

Once the sunflower seeds have been roasted, remove from pan and set on a bowl or plate that is not hot and allow them to cool.

Prepare the salad dressing. Combine all salad dressing ingredients together in a bowl, whisk and set aside, allowing the flavors to mingle while you prepare the salad.

Combine all salad ingredients together in a large bowl. Here is where you can modify the recipe. If you hate avocados, simply leave them out and add a green pepper. Have fun with it.

Pour the salad dressing on top of the salad mixture and use a large fork to mix the dressing and salad together evenly.

Add the sunflower seeds and the parmesan cheese on top of the salad and enjoy!
