For the perfect side dish alongside pulled BBQ chicken or to enjoy on its own, follow this easy purple cabbage recipe! It is simple, tasty and healthy.
- 1/2 a head of purple cabbage
- 1 large carrot – grated
- 1 cup of diced green onions
- 1 cup of olive oil
- 2 tbsp. of apple cider vinegar
- 1 tsp. of thyme
- 1/2 tsp. of salt
- 1/4 tsp. of pepper
Shred half a head of purple cabbage and place in a large bowl.
Grate one large carrot and slice one cup of green onions and add to the cabbage bowl.
Add the olive oil, apple cider vinegar, thyme, salt and pepper to the cabbage, green onions and carrots and give a big stir.
Serve immediately or refrigerate for later.
Tip – To add a bit of spice, dice one jalapeno and add to the slaw. It will give a nice kick!
