Who doesn’t love guacamole, am I right? It’s the perfect companion to a tortilla chip or to top your fish taco. Today’s recipe is exactly what I use to make the most delicious homemade guacamole in a matter of minutes.
- 2 avocados
- 1 medium tomato
- 1/4 cup of cilantro
- 1 clove of garlic
- 2 tbsp. of scallions
- Juice of 1 lime
- 1/4 tsp. of pepper
- 1/2 tsp. of salt
Chop the scallions and tomato and add to a medium sized bowl and set aside.
Slice the avocados lengthwise and remove the pit in the center with a spoon. Using the same spoon, scoop the avocado in to a separate bowl and discard the skins into a compost or trash. Mash the avocado with a fork or if you have a masher utensil, that works great as well.
Take the clove of garlic and use a micro plane zester or garlic press to make a garlic paste. Place the garlic in the bowl with the avocados.
Slice one lime in half and using a press, squeeze the lime juice directly into the smashed avocado and garlic puree.
Chop 1/4 cup of cilantro and place in the purred avocado bowl along with the salt and pepper.
Combine the chopped scallions and tomato to the avocado mixture by stiring together with a spoon. Enjoy immediately.
