Butternut Squash Casserole Recipe

Butternut Squash Casserole is a fall favorite of mine!


  • 1 Package of Pepperidge Farm Stuffing Mix
  • 6 Tbsp Salted Butter
  • 1 Carrot Grated
  • 1 Onion Grated
  • 1 Can of Cream of Chicken Soup
  • 8 oz. Sour Cream
  • 1 Green Pepper Chopped
  • 2 Cups Cooked Butternut Squash

Cooking Directions:

Melt butter in a non-stick frying pan on the stove top. Add Stuffing mix. (Reserve 1/2 a cup stuffing mix to sprinkle on top at the end). Mix all other ingredients in another pot. Add to stuffing mix. Mix well. Put in a 9 x 13 inch casserole dish. Sprinkle reserved stuffing mix. Bake at 350 degrees for 30 minutes.
