Fall is here. One of the best fall activities is cooking with all of the bountiful produce available. And, butternut Squash is the perfect fall produce to incorporate into dinners. This butternut squash recipe is a casserole fall favorite of mine! My mom always made this for Thanksgiving. It can actually be a replacement for traditional stuffing.
- 1 Package of Pepperidge Farm Stuffing Mix
- 6 Tbsp Salted Butter
- A Carrot Grated
- One Onion Grated
- 1 Can of Cream of Chicken Soup
- 8 oz. Sour Cream
- 1 Green Pepper Chopped
- 2 Cups Cooked Butternut Squash
Melt butter in a non-stick frying pan on the stove top. Add Stuffing mix. (Reserve 1/2 a cup stuffing mix to sprinkle on top at the end). Mix all other ingredients in another pot. Add to stuffing mix. Mix well. Put in a 9 x 13 inch casserole dish. Sprinkle reserved stuffing mix. Bake at 350 degrees for 30 minutes.
