Butternut Squash is a great fall produce to incorporate into dinners. This butternut squash recipe is a casserole fall favorite of mine! My mom always made this for Thanksgiving. It can actually be a replacement for traditional stuffing.
- 1 Package of Pepperidge Farm Stuffing Mix
- 6 Tbsp Salted Butter
- A Carrot Grated
- One Onion Grated
- 1 Can of Cream of Chicken Soup
- 8 oz. Sour Cream
- 1 Green Pepper Chopped
- 2 Cups Cooked Butternut Squash
Melt butter in a non-stick frying pan on the stove top. Add Stuffing mix. (Reserve 1/2 a cup stuffing mix to sprinkle on top at the end). Mix all other ingredients in another pot. Add to stuffing mix. Mix well. Put in a 9 x 13 inch casserole dish. Sprinkle reserved stuffing mix. Bake at 350 degrees for 30 minutes.
